My 3 Favorite Refreshing Summer Time Snacks!

Summer is all about savoring the flavors of the season! And when the weather gets hot, I always reach for foods that help cool me off. Here are three incredibly easy and healthy summer snack recipes that are perfect for keeping you cool, energized, and satisfied during those hot summer days!

Watermelon Feta Bites


  • Fresh watermelon, cut into bite-sized cubes

  • Feta cheese, crumbled

  • Fresh mint leaves

  • Balsamic glaze (optional)


  1. Place a watermelon cube on a toothpick or skewer.

  2. Top the watermelon cube with a sprinkle of crumbled feta cheese.

  3. Garnish with a fresh mint leaf.

  4. Drizzle with a touch of balsamic glaze, if desired, for an extra burst of flavor.

  5. Serve chilled and enjoy the delightful combination of juicy watermelon, savory feta, and refreshing mint.

Yogurt Parfait Popsicles


  • Greek yogurt (plain or flavored)

  • Fresh berries (strawberries, blueberries, raspberries)

  • Granola or crushed nuts

  • Honey (optional)


  1. In a popsicle mold, layer Greek yogurt, fresh berries, and granola or crushed nuts.

  2. Repeat the layers until the mold is filled, leaving a small space at the top.

  3. Drizzle a small amount of honey over each layer if desired.

  4. Insert popsicle sticks and freeze for several hours or overnight.

  5. Once frozen, remove from the mold and enjoy these creamy and nutritious yogurt parfait popsicles.

Cucumber Smoked Salmon Avocado Roll-Ups


  • English cucumber

  • Ripe avocado

  • Smoked salmon

  • Fresh dill or cilantro

  • Lemon juice

  • Salt and pepper to taste


  1. Slice the cucumber lengthwise into thin strips using a vegetable peeler or a mandoline.

  2. Mash the avocado in a bowl and season with lemon juice, salt, and pepper.

  3. Spread a thin layer of avocado onto each cucumber strip.

  4. Place a slice of smoked salmon on top of the avocado.

  5. Roll up the cucumber strips and secure with a toothpick.

Love the popsicle ideas! My 3 year old is so fussy and I’m hoping this will help me get something healthy into him by changing up the format. And it’s an excuse to use the dinosaur popsicle molds for myself too!

I have just discovered mango lassis--basically mango yogurt smoothies with spices. I do it with frozen mangos because it's easier, greek yogurt, water, and I sweeten with a little honey or agave and put in liberal amount of cardamom. The perfect breakfast for me!
