My 3 Favorite Refreshing Summer Time Snacks!

Summer is all about savoring the flavors of the season! And when the weather gets hot, I always reach for foods that help cool me off. Here are three incredibly easy and healthy summer snack recipes that are perfect for keeping you cool, energized, and satisfied during those hot summer days!

Watermelon Feta Bites

Ingredients:

  • Fresh watermelon, cut into bite-sized cubes

  • Feta cheese, crumbled

  • Fresh mint leaves

  • Balsamic glaze (optional)

Instructions:

  1. Place a watermelon cube on a toothpick or skewer.

  2. Top the watermelon cube with a sprinkle of crumbled feta cheese.

  3. Garnish with a fresh mint leaf.

  4. Drizzle with a touch of balsamic glaze, if desired, for an extra burst of flavor.

  5. Serve chilled and enjoy the delightful combination of juicy watermelon, savory feta, and refreshing mint.


Yogurt Parfait Popsicles

Ingredients:

  • Greek yogurt (plain or flavored)

  • Fresh berries (strawberries, blueberries, raspberries)

  • Granola or crushed nuts

  • Honey (optional)

Instructions:

  1. In a popsicle mold, layer Greek yogurt, fresh berries, and granola or crushed nuts.

  2. Repeat the layers until the mold is filled, leaving a small space at the top.

  3. Drizzle a small amount of honey over each layer if desired.

  4. Insert popsicle sticks and freeze for several hours or overnight.

Cucumber Smoked Salmon Avocado Roll-Ups

Ingredients:

  • English cucumber

  • Ripe avocado

  • Smoked salmon

Instructions:
